This is TASTY! Definitely warm and soothing on a chilly day too. Try it, you'll like it :)
1 small chicken (I use 1 pound cut up breast meat)
Water
Salt
Put chicken in water. Add salt to taste. Boil chicken until tender. Pull chicken from the bones and shred into bite-size pieces. Return to the cooking water. (Before you start to add the dumplings, you will need to return the water to a good boil.)
2 c. flour
3 T. butter shortening (I used our soft margarine)
½ c. buttermilk (I use ½ c. milk and ½ T. vinegar----stir together ahead of time and let sit on counter for about 10-15 minutes)
1 egg
Salt, pepper
Cut butter shortening into flour. Make a well in the middle of the flour, and add egg and buttermilk. Stir together into a dough. Put onto floured board, knead one or two times, and divide dough in half. Roll out half of dough into a thin sheet. Cut it into small squares –about inch by inch---or so. Make sure broth is boiling, and then slip the dough squares into the broth one at a time. Roll out rest of dough and cut and drop into broth. Add salt and pepper to taste. Allow the dumplings to simmer gently until tender and they thicken and make the broth creamy ---can be as long as an hour if you wish.
Sounds yummy! It is cool and cloudy here,so something with chicken and broth could be in my future!
